The Tagalog word for ‘food’ is pagkain. Learning about Filipino food involves understanding the cultural history and geography of the Philippines. Originating from various cultures but displaying regional characteristics, the food throughout the islands was prepared by Malay settlers, spiced by commercial relations with Chinese traders, stewed in three centuries of Spanish rule, and hamburgers by American colonial influence on the nation’s way of life.
The multiracial features of the Filipino — a Chinese-Malayan face, a Spanish name, and an American nickname — thus inform Filipino food, producing dishes of Eastern and Western extraction.
When pushed to determine Filipino food in one word, we’re apt to say “fusion.” Filipino delicacies hold the impact of our others who live nearby in Asia and the Pacific, as well as our colonial rulers from far-off areas throughout history. Our dishes and treats integrate dishes, components and cooking styles with origins in Malay, Chinese, and Iberian (Spanish & Portuguese) societies, among many others. These rich levels of impact make our meals somewhat unique.
But our delicacies don’t merely indicate foreign impact — it, of course, features our local values as well. The sustained benefit of Filipino dishes like adobo, sinigang, and kare-kare is evidence that our foods are concentrated on the ulam being typically provided at the centre of a table in sizes to share. This social, family-focused approach to foods is truly Filipino.
